The waste-nothing fried rice

The long anticipated school holiday went by so fast, it felt like it was a one week break instead of two. Oh well. Another one coming up somewhere in August. Woohoo!

The third day of starting school, and I am already on mc. My first one for this year, by the way. I cough so much during the night that it is just impossible for me to get a good rest. I would have gone to work anyway, even though it would the third day in a row of insufficient rest. But it seems El is starting to develop the cough and she was a little warm this morning. Taking care of El or taking care of the ungrateful brats? Not hard to choose at all. They are probably having a blast not seeing me today. Besides, I need to rest my vocal cord anyway. 

So, what's the deal with the title?

I'm just sharing a recipe that I made up. I'm sure someone must have cooked up this meal before (and probably rolling their eyes up), but I've only just stumble upon it myself. Okay.

The ingredients:
Left over rice from last night dinner (I am a lazy mom -_-)
Seaweed snack (that has gone soggy due to inefficient storage, waste nothing right?)
Onion and garlic
Sweet meat
Virgin Coconut Oil (it makes the rice taste sooooo good...oh and it's healthy!)

Heat up oil and fry according to this order-onion, garlic, sweet meat, sea weed and rice. (Of course you have to wait for a few minutes between the ingredients okay) Mix it up nice and done! And in case you are wondering-No, I did not forget to add salt. The seaweed and the sweet meat provided just enough taste.

Tada!

 The left hand side dish is my spicy tomato tuna (from a can!) heated up with some beansprout and tomato. Yeah, with my sore throat and all, I really stop eating spicy food. Well.

Anyhow, the rice went well with El. She even ate the seaweed without complaining. Yeah! 
FYI, El and veggie do not mix. Our theory-I had GDM when I was preggie with her. So my meal consists mainly of veggie only. Maybe she got tired of it?


Coffee time on a rainy day! That tin behind my mug of coffee is actually full of  ping pong cream crackers. I may or may not eat more than the 6 at the front. Teehee!
